I BOUGHT A COOKBOOK!

Since the beginning of February I’ve been eating differently. I needed to cut down on calories and white carbs and I’ve been doing that. And while I don’t intend to give up meat I was intrigued by the latest book by Jessica Seinfeld.

Vegan, at Times

I’ve been looking at way to incorporate more vegetables into my diet and those of my loved ones.

Taco Salad

I wasn’t in the market to add another to the shelf but I took a deep dive reviewing the recipes and I was hooked. I ordered the book and as soon as I received I bought ingredients for the Creamy Cannellini Bean Rigatoni and I’m happy to report everyone liked it. I was inspired to prepare a variation of a traditional Taco dinner by this Taco Salad image. I also have the fixings for the Cold Peanut Noodles in the cupboard and frig. And there are so many more recipes I am looking forward to preparing and enjoying.

I am a cook of necessity because I need to feed people. Don’t get me wrong there are a few things I don’t mind preparing. My mother’s Hot Crabmeat Dip recipe because it’s yummy and brings memories of Christmas. A Pulled Pork recipe I’ve modified to be quick and easy in one pot that gets the job done with a side of cole slaw and a baked Salmon dish which again is quick and easy. See the emphasis is on less time in the kitchen.

But, I’m truly feeling energized and inspired to cook friends. Til next time be well and I’ll see you over on Instagram.
